Our boutique winery
Founded in 1884, Pinget is an authentic family estate passed down from generation to generation. At all times, its successive owners have devoted themselves to the cultivation of Chasselas, a grape that has found land of choice on the steep slopes of Lavaux, facing Lake Geneva, thus enjoying a privileged sunshine. Today, with the resumption of this magnificent estate, we wish to preserve the artisanal methods acquired while bringing the modern technical development guarantee of wines answering the requirements of current quality.
Our working methods
Our mantra is "to give time to time". We consider it counterproductive to bottle a wine too early. To do this, we have set ourselves a charter of good conduct that requires us to bottle our white wines after June 1st of the following year. It will be the same with the red wines where we will leave a minimum of 18 months between the return of the harvest and the bottling.
White wines
Vintages of 600 to 800 g / m2, vintage stride, partially destemmed, pressing and settling. Aged for 8 to 12 months in stainless steel vats to allow a harmonious blooming, without betraying the character and purity of Chasselas, whose sensitivity and finesse do not support the tastes of oxidation and pronounced woody.
Red wines
Winemaking yields of 400 to 600 g / m2, untreated vintage, partially scraped, cold maceration followed by 25 to 30 days of vatting. Vatting, pressing and development of the second fermentation in stainless steel tanks. Filling and sinking in barrels of 225 lt. Aging 18 to 36 months in barrels.
About us
We are two brothers of about thirty years already active for a number of years in the profession. We want to work closer to nature, both during winery work and cellar work where we avoid all useless operations to obtain wines of character.
